Kale Salad

 

Ingredients:

 

1 bunch of Kale

ΒΌ cup of Extra Virgin Olive Oil

2 Limes, juiced

Black pepper

Sea Salt

Tomatoes

Green Peppers

Red Onions

Raw Coconut Vinegar

  1. Thoroughly clean and remove stem from the kale.
  2. Chop kale
  3. Soak kale in water at room temperature for about 30 min (Optional) In my opinion it helps tenderize the kale.
  4. In large bowl, add the kale and extra virgin olive oil.
  5. Massage the extra virgin olive oil until the kale starts to soften and wilt, 2 to 3 minutes.
  6. Add lime juice, sea salt, and black pepper
  7. Add tomatoes, green peppers, red onions and toss
  8. Add a splash of raw coconut vinegar
